7 Easy Breakfast For Those Busy People Who Don't Eat in the Morning

Updated: Apr 12, 2025

Hello and welcome! I’m Tori and I am very open about my experiences and how I live my life battling mental illness, Type One Diabetes, and being a young adult in this crazy world.

In this article you’ll find some easy breakfasts to make so you’ll stop skipping breakfast and start eating more. I know this feeling, hello, I’m an almost broke college student who never has the motivation to make breakfast in the morning. If this sounds like you, read on to see breakfast ideas that have completely changed my life.

I want to preface this by saying, I’m not a nutritionist, dietician or medically trained in any aspect. These are recommendations I have been given by trained medical opinions that work for me, they may not work for you. Now that that’s done, let’s get into it.

I tried to find easy breakfasts that have a little bit of everything for that health and had easy swaps for you to change and try at different points.

First off, we have oatmeal.

Oatmeal is easy there are so many ways to make it and eat it. I’m going to give a few of my favorites and then some I’ve tried and not liked the most but have friends who live off these recipes. My all-time favorite variation of oatmeal is defiantly hot oatmeal with blueberries, strawberries, cinnamon, and a little bit of peanut butter. I also really like to add protein powder into my oatmeal, I have vanilla and cookies ‘n cream, which both create different variations of my oatmeal easily. My second favorite is to add crushed graham crackers and chocolate chips to it, the chocolate melts nicely and the graham crackers help to make sure to balance the flavors out. For these recipes, boil some water, pour your oatmeal into a bowl (I do between ½-1 cup of oatmeal), once the water boils add it to the bowl and stir until you get the consistency you like. After this add your toppings and enjoy. You can also do this with milk! For the other recipes I talked about, these are cold versions and can be easier to make because they sit in your fridge and are easy grab ‘n go’s. The first one is apple pie overnight oats. For this recipe you need rolled oats, milk, cinnamon, nutmeg, allspice, and flax seeds. Mix these together in a jar of some sort for later. Then add your milk, maple syrup (or any syrup) and mix everything together. Lastly, add your apples slices. Pop this into your fridge and eat in the morning! For this recipe you want those oats in the fridge for at least 8 hours. I have also linked the original recipe down below if you want to read more on it! This next one is for my coffee lovers! A cold brew overnight oat. You need your rolled oats, cold brew (just a little!), vanilla almond milk (or regular milk), protein powder, chia seeds, and syrup if you would like it sweetened. I have also added the link to this one down below if you would like to read about this genius idea more! There are so many different recipes and ways to make oatmeal I could only add a couple, but if you want to explore Pinterest has some amazing ones, and I have my Pinterest linked here on the website if you’d like to check out some more of my favs!

Second, eggs.

This is going to be the easiest and fastest breakfast idea. You can cook them a few ways (and I’m sure I don’t know all the ways either). Sunny side up, scrambled, hard boiled are all simple options. For our topic I would say hard boiled would be the easiest, fastest one. They have amazing macros as well, filled with high protein but no carbs (to keep that blood sugar stable). Just place the eggs in a pan, fill the pan with water that completely covers the eggs, put on medium heat, and cook those eggs for 9-12 minutes. Add cheese, seasoning, and toast on the side for a good breakfast! Eggs are the easiest thing since there isn’t much to explain that most people don’t know.

Third, English muffin and bread based

As of lately, English Muffins have been my breakfast obsession, not the healthiest but I’m eating and that’s important too! I love to toast my English Muffin until it’s brown and crunchy before adding cream cheese, but sometimes I’ll add peanut butter instead. As for toast, this is a good side for eggs, soup, or other bigger breakfasts. Nut butter is a great idea for this, but butter is also great if you have a breakfast with a lot of flavors already. My favorite kind of toast is avocado toast with Everything but the Bagel seasoning. I toast a piece of bread and add ½ an avocado on top with some seasoning and sometimes olive oil. This is also an easy breakfast, if you’re really in a rush you don’t even have to toast the bread, just throw the toppings on top!

I’m sure most of us have had one of these in our lifetimes. Between fast food, restaurants, coffee shops and homemade these sandwiches are fast and good. Croissant sandwiches always feel the most “breakfast” to me, so let’s pretend that’s what kind of bread we’re using, even though it can be any kind of bread. My first recommendation is ham and egg. Add some cheese onto is and it’s a melty sandwich waiting to be eaten while you’re riding the bus or last-minute studying on your way to class. You can also make an avocado sandwich. I also have a Pinterest board here.

Fifth, soup

This one is super simple. You just need a can of soup, 5 minutes, a bowl, spoon, and pot. Warm up the soup and enjoy! I added this one since the weather is starting to cool down. I’m going to talk about soup a lot more as it gets colder here in Texas, since it’s one of my favorite foods year-round.

Sixth, cereal

This is the simplest one yet. You know what do. I’m just creating a list for you to look at when you run out of ideas. This is just milk, water, orange juice and a bowl with your favorite cereal. I would suggest adding something on the side so you feel full after eating, but something is better than nothing.

Lastly, muffins

I love muffins. Do you? These are easy as well. You can bake them the night before and eat them the next morning. There are even muffins you can make in the microwave now. I have made of board of all kinds of muffins. There are oven, microwave, and air fryer recipes depending on what you’re looking for.
